Acadian Redfish from Chef’s Recipe Box

Last week, we spent an afternoon in the kitchen with Stafford’s Corporate Chef DJ Flynn learning to make a delicious Acadian Redfish with Ravigote!  Check out the video on our Facebook page to see us in action, and follow along with the recipe bellow to learn how to make this great summer dish!
Acadian Redfish

1 Filet of Acadian Redfish

Salt, Pepper, Vegetable Oil As needed dsc_0058

Butter As needed 

Lemon, for Juice and Garnish

Sauté until done to your liking.

Ravigote                             

Yield 6 cups                              

1 Small Red Onion, diced

1 Small Yellow Onion, diced

1 Small Fennel diced

3 Tablespoons Peppercorn, wholedsc_0054

6 Tablespoons Dill         

6 oz Extra Virgin Olive Oil

3 oz Capers drained

3 Tablespoons Sherry Vinegar

2 teaspoons Kosher Salt  

Combine all ingredients, serve over fish.
