1 Filet of Acadian Redfish
Salt, Pepper, Vegetable Oil As needed
Butter As needed
Lemon, for Juice and Garnish
Sauté until done to your liking.
Yield 6 cups
1 Small Red Onion, diced
1 Small Yellow Onion, diced
1 Small Fennel diced
3 Tablespoons Peppercorn, whole
6 Tablespoons Dill
6 oz Extra Virgin Olive Oil
3 oz Capers drained
3 Tablespoons Sherry Vinegar
2 teaspoons Kosher Salt
Combine all ingredients, serve over fish.
