Stafford’s Perry Hotel in downtown Petoskey will host the next Chef’s Across the Great Lakes charity dinner, Tuesday, May 16 in the hotel’s Rose Room. Proceeds will benefit the Gerald Gramzay-Stafford’s Hospitality Culinary Scholarship Fund with the Petoskey-Harbor Springs Area Community Foundation. The Foundation is dedicated to furthering education, awarding culinary arts scholarships annually to a Petoskey area high school graduate. Prior to his passing in October 2013, Chef Gerald Gramzay was Stafford’s corporate chef and business partner of more than 13 years.
Chefs Across the Great Lakes is about collaboration, sharing of culinary styles and building good will and lasting friendships between Canada and The United States. Chef DJ Flynn of Stafford’s Hospitality, Inc. and Chef Guy Bedard of Killarney Mt. Lodge have created a menu featuring:
Asparagus Bisque – Michigan sharp cheddar, pistachio mousse
Great Lake Trout Gravlax – House brined, caper berries, seaweed slaw, Smyrna fig caramelized onion chutney
Cracklin’ Cornish Hen – Slow roasted, crisped skin, quinoa pulse blend stuffing, spring vegetables, apricot agrodolce
Maple and Kahlua Crème Brûlée – Fresh berries, almond brittle
Killarney Mountain Lodge, situated on Georgian Bay in Northern Ontario, has conducted several chef exchange events in Michigan, the last with Twisted Olive restaurant in Petoskey.
